Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • ½ cup (120 ml) chicken broth
  • 2 tbsp fresh lemon juice (about 1 lemon)
  • 1 tsp lemon zest
  • 1 tsp dried thyme or 1 tbsp fresh thyme
  • Optional: chopped parsley for garnish

Instructions

1. Prepare the Chicken

  1. Season chicken with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Add chicken and cook 4–6 min per side, until golden and internal temp reaches 165°F (74°C).
  4. Remove chicken from skillet and set aside.

2. Make the Lemon Garlic Butter Sauce

  1. Reduce heat to medium. Add butter to the same skillet.
  2. Sauté garlic for 30–60 seconds until fragrant.
  3. Pour in chicken broth, lemon juice, and lemon zest.
  4. Stir in thyme and let sauce simmer 2–3 minutes to slightly thicken.

3. Combine

  • Return chicken to skillet, spoon sauce over it, and cook 1–2 more minutes to coat.
  • Garnish with chopped parsley.

Serving Suggestions

  • Over rice, pasta, or mashed potatoes.
  • With roasted vegetables or a fresh salad.
  • Drizzle extra sauce over everything for maximum flavor.

Variations

  • Creamy Version: Add ¼ cup heavy cream to the sauce for a richer texture.
  • Spicy Lemon Garlic: Add ¼ tsp red pepper flakes to the garlic.
  • Herb Mix: Replace thyme with rosemary, oregano, or Italian seasoning.
