Lemon delicious pudding

Here’s a classic Lemon Delicious Pudding (also called lemon self-saucing pudding)—light, fluffy on top with a tangy lemon sauce underneath 🍋


Lemon Delicious Pudding

Ingredients (serves 4–6)

  • 3/4 cup granulated sugar
  • 2 tbsp butter, softened
  • Zest of 1 lemon
  • 1/3 cup fresh lemon juice
  • 2 large eggs, separated
  • 1/4 cup all-purpose flour
  • 1 cup milk
  • Pinch of salt
  • Powdered sugar or cream (to serve)

Instructions

1. Preheat oven

  • Preheat oven to 350°F (175°C).
  • Lightly grease a baking dish or 4–6 ramekins.

2. Make the batter

  1. Cream sugar, butter, and lemon zest until pale.
  2. Beat in egg yolks, then lemon juice.
  3. Stir in flour and salt.
  4. Gradually mix in milk until smooth.

3. Whip egg whites

  • Beat egg whites to soft peaks.
  • Gently fold into lemon mixture (don’t overmix).

4. Bake

  • Pour mixture into prepared dish.
  • Place dish in a roasting pan and pour hot water halfway up the sides (water bath).
  • Bake 35–40 minutes, until top is set and lightly golden.

5. Serve

  • Dust with powdered sugar.
  • Serve warm with cream, custard, or ice cream.

Why It Works

  • The batter separates while baking:
    • Light sponge on top
    • Warm lemon sauce underneath

Tips

  • Fresh lemon juice gives the best flavor.
  • Don’t skip the water bath—it ensures a creamy sauce.
  • Best eaten warm, but leftovers reheat well.
