Lazy Day Lemon Cream Pie Bars

Ingredients

Crust

  • 1½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup butter, melted

Lemon Cream Filling

  • 1 package (8 oz) cream cheese, softened
  • 1 can (14 oz) sweetened condensed milk
  • ½ cup lemon juice (fresh is best)
  • 1 tsp lemon zest (optional)
  • 1 tsp vanilla extract

Topping

  • Whipped topping (Cool Whip)
  • Lemon zest or thin slices (optional)

Instructions

  1. Prepare Crust
    • Preheat oven to 350°F (175°C).
    • Mix graham cracker crumbs, sugar, and melted butter.
    • Press firmly into a 9×9-inch baking pan.
    • Bake 8–10 minutes. Let cool slightly.
  2. Make Filling
    • Beat cream cheese until smooth.
    • Gradually add sweetened condensed milk, mixing until creamy.
    • Stir in lemon juice, zest, and vanilla.
  3. Assemble
    • Pour lemon filling over warm crust, spreading evenly.
  4. Chill
    • Refrigerate at least 2 hours (longer is better for firm bars).
  5. Top & Serve
    • Spread whipped topping on top just before serving.
    • Garnish with lemon zest or thin lemon slices.
