Keto nachos

Here’s a Keto Nachos recipe — all the flavor of traditional nachos without the carb-heavy tortilla chips. Perfect for low-carb or ketogenic diets!


🥓 Keto Nachos

Ingredients (serves 2–4)

For the “chips”

  • 1–2 large low-carb tortillas (or cheese crisps — see below)
  • 1–2 tbsp olive oil or butter
  • Salt, to taste

For the toppings

  • 1 lb ground beef or turkey
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • Salt & pepper, to taste
  • 1 cup shredded cheddar or Mexican blend cheese
  • ½ cup diced tomatoes
  • ¼ cup sliced jalapeños (pickled or fresh)
  • ¼ cup sliced black olives
  • 2–3 green onions, chopped
  • Sour cream or guacamole, for serving

Optional: avocado, salsa, or hot sauce


Instructions

1. Make keto “chips”

Option 1: Tortilla chips

  1. Preheat oven to 375°F (190°C).
  2. Cut low-carb tortillas into triangles.
  3. Brush lightly with olive oil and sprinkle salt.
  4. Bake 8–10 minutes until crisp.

Option 2: Cheese crisps

  1. Preheat oven to 400°F (200°C).
  2. Place small mounds of shredded cheese on parchment-lined baking sheet.
  3. Bake 5–7 minutes until golden and crispy.

2. Cook the meat

  1. In a skillet over medium heat, cook ground meat until browned.
  2. Add chili powder, cumin, smoked paprika, salt, and pepper.
  3. Drain excess fat and set aside.

3. Assemble nachos

  1. Spread keto chips on a baking sheet or oven-safe dish.
  2. Layer cooked meat over the chips.
  3. Sprinkle shredded cheese evenly on top.
  4. Optional: add some jalapeños or olives before baking.

4. Melt cheese

  • Bake at 375°F (190°C) for 5–7 minutes until cheese is melted and bubbly.

5. Serve

  • Top with diced tomatoes, green onions, sour cream, and guacamole.
  • Enjoy immediately while hot and cheesy.

Tips & Variations

  • Vegetarian: Replace meat with sautéed mushrooms, peppers, and zucchini.
  • Extra spicy: Add sliced fresh jalapeños or a sprinkle of cayenne.
  • Meal prep: Assemble toppings separately and reheat cheese/meat in the oven before serving.
  • Cheese layer: Use a mix of cheddar, Monterey Jack, or mozzarella for extra gooeyness.
