Here’s a classic, hearty Italian Sausage with Peppers and Onions recipe—perfect for a weeknight dinner, sandwiches, or serving over pasta.


🌶️ Italian Sausage with Peppers and Onions

Ingredients (serves 4)

  • 4 Italian sausages (mild, sweet, or spicy)
  • 2 tbsp olive oil
  • 1 large red bell pepper, sliced
  • 1 large green bell pepper, sliced
  • 1 large yellow bell pepper, sliced (optional for color)
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ½ tsp dried oregano or Italian seasoning
  • ¼ cup chicken broth, white wine, or water (for deglazing)
  • Optional: hoagie rolls or crusty bread for serving

Instructions

1. Cook the Sausages

  1. In a large skillet over medium heat, add 1 tbsp olive oil.
  2. Brown sausages on all sides (about 5–7 minutes).
  3. Remove sausages from skillet and set aside.
  4. Optional: You can finish cooking sausages in the oven at 350°F (175°C) for 10–15 minutes if thick.

2. Sauté Peppers & Onions

  1. In the same skillet, add remaining 1 tbsp olive oil.
  2. Add sliced onions and bell peppers.
  3. Sauté 5–7 minutes until softened.
  4. Add minced garlic, oregano, salt, and pepper; cook 1 more minute.

3. Combine and Simmer

  1. Return sausages to the skillet.
  2. Add ¼ cup chicken broth or wine to deglaze pan.
  3. Cover and simmer 10–12 minutes, until sausages are fully cooked and flavors meld.

4. Serve

  • Serve sausages on a plate with peppers and onions.
  • Optional: Slice sausages and stuff into hoagie rolls for sandwiches.
  • Great over pasta, rice, or with crusty bread.

Tips & Variations

  • Spicy Version: Use hot Italian sausages or add red pepper flakes.
  • Slow Cooker Version: Layer sausages, peppers, and onions in a slow cooker with ½ cup broth. Cook on low 4–6 hours.
  • Add Tomatoes: Add 1 cup diced tomatoes or tomato sauce for an Italian-style stew.
  • Grilled Version: Grill sausages and toss sautéed peppers & onions on top.
