Ingredients

  • 4 Italian sausages (mild, sweet, or spicy, depending on preference)
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 2 bell peppers (red, yellow, or green), thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano

  • Salt and pepper, to taste
  • ½ cup chicken broth or white wine (optional, for extra flavor)
  • 4 sandwich rolls (optional, for serving)

  1. Cook the sausages:
    • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
    • Add the sausages and cook until browned on all sides, about 5–6 minutes.
    • Remove sausages from the skillet and set aside.
  2. Cook the vegetables:
    • In the same skillet, add the remaining olive oil.
    • Add onions and bell peppers. Sauté for 5–7 minutes until softened and slightly caramelized.
    • Add garlic, oregano, red pepper flakes, salt, and pepper. Cook 1–2 minutes more until fragrant.
  3. Combine sausages and vegetables:
    • Return the sausages to the skillet.
    • Add chicken broth or wine (if using) and cover the skillet.
    • Simmer for 10–15 minutes, turning occasionally, until sausages are cooked through (internal temperature 160°F / 71°C for pork sausages).
  4. Serve:
    • Serve hot with the peppers and onions over rice, pasta, or in sandwich rolls.
    • Garnish with fresh parsley if desired.

  • Sausage choices: Sweet, mild, or spicy Italian sausages all work. Mix types for variety.
  • Vegetable variations: Add mushrooms, cherry tomatoes, or zucchini for extra flavor.
