🛒 Ingredients

Cake

  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 4 large eggs, separated
  • 6 oz (170 g) high-quality dark chocolate (60–70%), melted
  • ¾ cup all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup whole milk
  • 1 tsp vanilla extract

Chocolate Glaze (Traditional Style)

  • ¾ cup heavy cream
  • 6 oz dark chocolate, chopped
  • 1 tbsp butter
  • 1 tbsp powdered sugar (optional, for shine)

🔪 Instructions

Make the Cake

  1. Preheat oven to 350°F (175°C). Grease and line a 9-inch round cake pan.
  2. Cream butter & sugar until light and fluffy.
  3. Add egg yolks, one at a time.
  4. Stir in melted chocolate and vanilla.
  5. Mix dry ingredients (flour, cocoa, baking powder, salt).
  6. Alternate dry ingredients and milk into batter.
  7. Beat egg whites until stiff peaks form.
  8. Gently fold whites into batter (this keeps it light but rich).
  9. Bake 35–40 minutes, until a toothpick comes out with moist crumbs.
  10. Cool completely.

Make the Glaze

  1. Heat cream until just steaming (not boiling).
  2. Pour over chocolate and butter.
  3. Let sit 2 minutes, then whisk smooth.
  4. Stir in powdered sugar if using.

Assemble

  • Pour glaze over cooled cake, letting it drip naturally.
  • Chill 30 minutes for a classic glossy finish.

  • With raspberries or sour cherry preserves
  • Alongside strong coffee or espresso
