Here’s a classic Homemade Turtle Candy recipe—rich caramel, roasted pecans, and smooth chocolate 🍫🐢


Homemade Turtle Candy with Pecans and Caramel

Ingredients (Makes ~24 turtles)

Caramel

  • 1 cup (200 g) granulated sugar
  • 6 tbsp unsalted butter, cubed
  • ½ cup heavy cream
  • ½ tsp vanilla extract
  • Pinch of salt

Chocolate & Nuts

  • 1 cup pecan halves, toasted
  • 1 cup semisweet or milk chocolate chips (or chopped chocolate)

Instructions

  1. Prep Pecan Base
    • Line a baking sheet with parchment paper.
    • Place 3–4 pecan halves in small clusters (~24). These form the base of each turtle candy.
  2. Make Caramel
    • In a medium saucepan over medium heat, melt sugar, stirring constantly until golden brown.
    • Add butter carefully (it will bubble), stir until melted.
    • Slowly add cream while stirring; cook 1–2 minutes until smooth.
    • Remove from heat and stir in vanilla and salt.
  3. Assemble Turtles
    • Spoon a small amount of warm caramel over each pecan cluster, covering but leaving a little pecan visible.
    • Let caramel cool for 5–10 minutes to firm slightly.
  4. Top with Chocolate
    • Melt chocolate in microwave (30-second intervals, stirring) or double boiler.
    • Drizzle or spoon chocolate over caramel-covered pecans.
    • Let set at room temperature or refrigerate 20–30 minutes until firm.
  5. Serve
    • Store in an airtight container at room temperature or in the fridge.
    • Enjoy within 1–2 weeks for best flavor.

Tips

  • Soft caramel: Cook a little less if you want a softer center.
  • Crunchier pecans: Toast them lightly in the oven at 350°F (175°C) for 5–7 minutes.
  • Variation: Add a pinch of sea salt on top of chocolate for salted turtles.
  • Alternative: Use dark chocolate for a richer taste.
