Instructions
- Prep Pecan Base
- Line a baking sheet with parchment paper.
- Place 3–4 pecan halves in small clusters (~24). These form the base of each turtle candy.
- Make Caramel
- In a medium saucepan over medium heat, melt sugar, stirring constantly until golden brown.
- Add butter carefully (it will bubble), stir until melted.
- Slowly add cream while stirring; cook 1–2 minutes until smooth.
- Remove from heat and stir in vanilla and salt.
- Assemble Turtles
- Spoon a small amount of warm caramel over each pecan cluster, covering but leaving a little pecan visible.
- Let caramel cool for 5–10 minutes to firm slightly.
- Top with Chocolate
- Melt chocolate in microwave (30-second intervals, stirring) or double boiler.
