Homemade KFC Chicken

Ingredients

Chicken

  • 8–10 pieces chicken (drumsticks, thighs, or mixed)
  • 2 cups buttermilk
  • 1 tsp salt
  • 1 tsp black pepper

  • 2½ cups all-purpose flour
  • 1 tbsp paprika
  • 1 tbsp white pepper
  • 1 tbsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp dried thyme

  • 1 tsp dried oregano
  • 1 tsp celery salt
  • 1 tsp ground ginger
  • ½ tsp mustard powder

For frying

  • Vegetable or peanut oil (enough for deep frying)

Instructions

1. Marinate the chicken

  • Mix buttermilk, salt, and pepper.
  • Add chicken, cover, and refrigerate at least 4 hours (overnight is best).

2. Prepare the coating

  • In a large bowl, whisk together all seasoned flour ingredients.

3. Coat the chicken

  • Remove chicken from buttermilk (let excess drip off).
  • Dredge thoroughly in seasoned flour.
  • Press flour onto chicken for extra crunch.
  • Let coated chicken rest 10–15 minutes (this helps the crust stick).

4. Fry

  • Heat oil to 325–350°F (165–175°C).
  • Fry chicken in batches (don’t overcrowd).
  • Cook 12–15 minutes, turning occasionally, until golden brown and internal temp reaches 165°F (74°C).
  • Drain on a wire rack or paper towels.

5. Rest & serve

  • Let rest 5 minutes before eating.
  • Serve hot with mashed potatoes, gravy, coleslaw, or biscuits.
