Here’s a Heavenly Moist Fruit Cake—rich, soft, deeply flavored, and never dry. This is the kind of fruit cake that wins people over, even if they “don’t like fruit cake” 🍰✨


Heavenly Moist Fruit Cake

Ingredients

Fruit Mix

  • 2½ cups mixed dried fruit
    (raisins, cherries, dates, cranberries, pineapple)
  • ½ cup orange juice or apple juice
  • Optional: ¼ cup rum or brandy (for extra richness)

Cake Batter

  • ¾ cup (170 g) unsalted butter, softened
  • ¾ cup (150 g) brown sugar
  • 3 large eggs (room temperature)
  • 1½ cups (190 g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp cloves (optional)
  • Pinch of salt
  • ½ cup chopped nuts (walnuts or pecans)
  • Zest of 1 orange or lemon
  • 1 tsp vanilla extract

Instructions

1. Soak the Fruit (Key to Moistness)

  1. Combine dried fruit and juice (and alcohol if using).
  2. Heat gently on the stove for 5 minutes or microwave 2 minutes.
  3. Cover and let soak at least 1 hour (overnight is best). Cool completely.

2. Prepare the Batter

  1. Preheat oven to 325°F (160°C).
  2. Grease and line an 8-inch loaf pan or round cake tin.
  3. Cream butter and brown sugar until light and fluffy.
  4. Beat in eggs one at a time.
  5. Stir in vanilla and citrus zest.

3. Combine Dry Ingredients

  • Whisk flour, baking powder, baking soda, spices, and salt.

4. Bring It All Together

  1. Fold dry ingredients into batter gently.
  2. Add soaked fruit with all the soaking liquid.
  3. Fold in nuts.

5. Bake Low & Slow

  1. Pour batter into pan and smooth top.
  2. Bake 75–90 minutes, covering loosely with foil if browning too fast.
  3. Cake is done when a skewer comes out clean.

6. Moisture Boost (Optional but Amazing)

  • While warm, brush cake with 2–3 tbsp warm juice or brandy.
  • Cool completely in the pan.

Storage & Aging (Flavor Gets Better!)

  • Wrap tightly and store at room temp up to 1 week
  • Refrigerate up to 1 month
  • Freeze up to 6 months
  • For traditional richness: brush with juice or brandy every few days
