  • 1 lb ground beef
  • 1 lb potatoes (russet or Yukon gold), diced into small cubes
  • 1 medium onion, diced
  • 2–3 cloves garlic, minced
  • 1 green bell pepper (optional), diced
  • 2 tbsp oil or butter
  • 1 tsp smoked paprika
  • 1 tsp dried thyme or oregano
  • Salt and pepper to taste
  • Optional: ½ cup shredded cheese
  • Optional garnish: chopped parsley or green onions

1. Prep potatoes

  • Heat 1 tbsp oil in a large skillet over medium heat.
  • Add diced potatoes, season lightly with salt and pepper, and cook 10–15 minutes, stirring occasionally, until tender and lightly browned.
  • Remove potatoes from skillet and set aside.

2. Cook ground beef

  • In the same skillet, add remaining oil.
  • Sauté onions (and bell pepper if using) until soft.
  • Add garlic and cook 1 minute.
  • Add ground beef and cook until browned, breaking up any clumps.
  • Season with smoked paprika, thyme/oregano, salt, and pepper.

3. Combine

  • Return potatoes to the skillet and mix with the beef.
  • Cook 2–3 more minutes so flavors meld.
  • Optional: sprinkle shredded cheese on top and cover until melted.

4. Serve

  • Garnish with chopped parsley or green onions.
  • Serve hot with a simple side salad or steamed veggies.

  • Spicy version: Add ½ tsp chili powder or red pepper flakes.
  • Creamy version: Stir in ¼ cup sour cream or cream cheese at the end.
  • One-pan dinner: Add carrots, peas, or corn with the potatoes for a complete meal.
  • Casserole version: Layer in a baking dish, top with cheese, and bake 15 minutes at 375°F.
