  • 1 lb (450 g) fresh green beans, trimmed

Instructions

  1. Blanch the beans: Bring a pot of salted water to boil. Add green beans and cook 2–3 minutes until bright green and slightly tender. Drain and immediately plunge into ice water to stop cooking.
  2. Toast almonds (optional): In a skillet over medium heat, toast almonds until golden, about 2–3 minutes. Remove and set aside.
  3. Sauté beans: In the same skillet, heat olive oil or butter. Add garlic and cook 30 seconds until fragrant. Add green beans and sauté 3–5 minutes until tender-crisp.
  4. Finish & serve: Season with salt and pepper, toss in almonds, and optionally add a squeeze of lemon or sprinkle of parmesan. Serve warm.

Baked Green Beans with Parmesan

Serves 2–4

Ingredients

  • 1 lb (450 g) green beans, trimmed
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • ¼ cup grated parmesan
  • Optional: breadcrumbs or minced garlic

Instructions

  1. Preheat oven to 400 °F (200 °C).
  2. Toss green beans with olive oil, salt, and pepper on a baking sheet.
  3. Roast for 15–20 minutes, shaking the pan halfway through, until beans are tender and slightly crispy.
  4. Sprinkle with parmesan (and breadcrumbs if using) during the last 5 minutes of baking. Serve warm.

💡 Tips:

  • For extra flavor, add crispy bacon bits or caramelized shallots.
  • Fresh green beans work best, but frozen can be used—just skip blanching and bake a bit longer.
