Greek Chicken Gyros

Ingredients

Chicken Marinade

  • 1½–2 lbs boneless, skinless chicken thighs (or breasts)
  • 3 tbsp olive oil
  • 3 tbsp lemon juice
  • 4 cloves garlic, minced
  • 2 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp ground cumin
  • ½ tsp salt
  • ½ tsp black pepper

Tzatziki Sauce

  • 1 cup Greek yogurt
  • ½ English cucumber, grated & squeezed dry
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1–2 cloves garlic, minced
  • ½ tsp salt
  • Fresh dill or mint (optional)

For Serving

  • Pita bread (Greek-style)
  • Tomatoes, sliced
  • Red onion, thinly sliced
  • Lettuce or fries (traditional option)

Instructions

  1. Marinate the Chicken
    Combine all marinade ingredients. Coat chicken well and marinate at least 30 minutes (2–24 hours for best flavor).
  2. Cook the Chicken
    • Grill: Medium-high heat, 5–7 minutes per side
    • Skillet: Cook in olive oil over medium-high until golden
    • Oven: 425°F (220°C) for 20–25 minutes
      Let rest 5 minutes, then slice thinly.
  3. Make Tzatziki
    Mix all ingredients and chill 15 minutes.
  4. Assemble Gyros
    Warm pita. Add chicken, tomato, onion, optional fries, and drizzle generously with tzatziki.

Tips for Authentic Flavor

  • Use chicken thighs for juicier meat
  • Sprinkle a little red wine vinegar on the onions
  • Serve with Greek fries (oregano + feta)
