Grandma’s Chocolate Pie

Ingredients

For the crust

  • 1 pre-baked 9-inch pie crust (or homemade)

For the filling

  • 3/4 cup sugar
  • 1/4 cup unsweetened cocoa powder
  • 3 tbsp cornstarch
  • 1/4 tsp salt
  • 2 3/4 cups milk
  • 3 large egg yolks, lightly beaten
  • 2 tbsp butter
  • 1 tsp vanilla extract

For the topping

  • Whipped cream (store-bought or homemade)
  • Chocolate shavings or cocoa powder for garnish (optional)

Instructions

  1. Make the filling
    • In a medium saucepan, whisk together sugar, cocoa, cornstarch, and salt.
    • Gradually whisk in milk until smooth.
    • Cook over medium heat, stirring constantly, until mixture thickens and starts to bubble.
  2. Temper the eggs
    • Slowly whisk about 1/2 cup of hot chocolate mixture into the egg yolks.
    • Then whisk the egg yolk mixture back into the saucepan.
    • Cook 1–2 more minutes, stirring constantly, until very thick.
  3. Finish the filling
    • Remove from heat. Stir in butter and vanilla until smooth.
  4. Assemble
    • Pour chocolate filling into pre-baked pie crust.
    • Let cool to room temperature, then refrigerate at least 3–4 hours (or overnight) until set.
  5. Top & serve
    • Spread whipped cream over the chilled pie.
    • Garnish with chocolate shavings or a light dusting of cocoa powder.

Tips

  • For extra richness, use half-and-half or whole milk instead of just milk.
  • Add a pinch of instant coffee powder to the filling—it enhances the chocolate flavor without tasting like coffee.
  • For a graham cracker crust version, simply use crushed graham crackers mixed with butter and press into the pan.
