Garlic soup

Ahh, garlic soup — simple, soothing, and way more comforting than it has any right to be 🧄🍲
Here’s a classic European-style garlic soup (think Central/Eastern Europe), plus an optional creamy twist.


Classic Garlic Soup

Ingredients

  • 8–10 cloves garlic, thinly sliced (yes, really)
  • 2 tbsp butter or olive oil
  • 1 small onion, finely chopped (optional but common)
  • 4 cups chicken or vegetable broth
  • Salt & black pepper to taste
  • ½ tsp dried thyme or marjoram (traditional)
  • Croutons or toasted bread, for serving
  • Optional: grated cheese (Gruyère, Emmental, or Parmesan)

Instructions

  1. Sauté aromatics
    • Melt butter in a pot over medium-low heat.
    • Add garlic (and onion if using).
    • Cook gently 5–7 minutes until soft and fragrant — do not brown.
  2. Add broth
    • Pour in broth, add thyme/marjoram.
    • Bring to a gentle simmer.
  3. Simmer
    • Cook 15–20 minutes to mellow the garlic.
    • Season with salt and pepper.
  4. Serve
    • Ladle into bowls.
    • Top with croutons and grated cheese.

Creamy Garlic Soup (Optional)

  • Stir in ½ cup heavy cream or 1 beaten egg (slowly, off heat) for richness.
  • Blend partially or fully if you want it smooth.

Very Traditional Add-Ins

  • 🥔 Cubed potatoes (add with broth, simmer until soft)
  • 🥚 Egg drop style: drizzle beaten egg into hot soup while stirring
  • 🧀 Cheese melted directly into the soup
  • 🌿 Fresh parsley on top

Tips

  • Low heat = sweet garlic, high heat = bitter garlic.
  • This soup is even better the next day.
  • Perfect for cold days or “I need comfort now” nights.
