Garlic Shrimp Crostini with Avocado

Ingredients

Crostini

  • 1 baguette, sliced ½-inch thick
  • Olive oil

Garlic Shrimp

  • 1 lb large shrimp, peeled & deveined
  • 3 tbsp olive oil
  • 3–4 cloves garlic, minced
  • ½ tsp red pepper flakes (optional)
  • Salt & black pepper
  • Juice of ½ lemon

Avocado Layer

  • 2 ripe avocados
  • 1 tbsp lime or lemon juice
  • Salt
  • Optional: chopped cilantro or parsley

Optional Garnish

  • Parmesan shavings
  • Cherry tomatoes, finely chopped

Instructions

  1. Make crostini:
    • Brush bread slices with olive oil.
    • Toast at 400°F / 205°C for 8–10 minutes until golden. Set aside.
  2. Prepare avocado:
    • Mash avocados with lime juice and salt until smooth but slightly chunky.
  3. Cook shrimp:
    • Heat olive oil in a skillet over medium-high.
    • Add garlic and red pepper flakes; sauté 30 seconds.
    • Add shrimp, season with salt & pepper, and cook 1–2 minutes per side until pink.
    • Finish with lemon juice.
  4. Assemble:
    • Spread avocado on crostini.
    • Top with garlic shrimp.
    • Garnish with herbs, Parmesan, or tomatoes if desired.

Tips

  • Don’t overcook shrimp—they turn rubbery fast.
  • Serve immediately for best texture.
  • Rub toasted bread lightly with a cut garlic clove for extra flavor.

Variations

  • Mediterranean: Add feta + drizzle balsamic glaze.
  • Spicy: Add chili oil or extra red pepper flakes.
  • Creamy: Mix a spoon of Greek yogurt into the avocado.
