Ingredients
- 12 oz spaghetti
- 2 tbsp olive oil or butter
- 2 chicken breasts, diced (or sliced)
- 4–5 cloves garlic, minced
- 1 cup heavy cream (or half-and-half)
- ¾–1 cup freshly grated Parmesan cheese
- ½ cup chicken broth (or pasta water)
- 1 tsp Italian seasoning
- ½ tsp garlic powder
- Salt & black pepper, to taste
- Optional: red pepper flakes, spinach, or mushrooms
- Fresh parsley, for garnish
Instructions
- Cook the pasta
Boil spaghetti in salted water until al dente. Reserve ½ cup pasta water, then drain. - Cook the chicken
Heat olive oil or butter in a large skillet over medium heat.
Season chicken with salt, pepper, garlic powder, and Italian seasoning.
Cook 5–7 minutes until golden and cooked through. Remove and set aside. - Make the sauce
In the same skillet, add garlic and sauté for 30 seconds until fragrant.
Pour in chicken broth and heavy cream. Simmer 2–3 minutes. - Add Parmesan
Lower heat and slowly stir in Parmesan until smooth and creamy.
Add a splash of pasta water if the sauce is too thick. - Combine
Return chicken to the skillet. Add spaghetti and toss until well coated. - Finish & serve
Taste and adjust seasoning. Garnish with parsley and extra Parmesan.
