🌿 Garlic Mushroom Kabobs Recipe

Ingredients

1 lb (450 g) button or cremini mushrooms, cleaned and stems trimmed

3 tbsp olive oil

3 cloves garlic, minced

1 tbsp soy sauce (optional, for umami flavor)

1 tbsp lemon juice or balsamic vinegar

1 tsp dried thyme or rosemary (or 1 tbsp fresh herbs, chopped)

½ tsp salt

¼ tsp black pepper

Instructions

Prep the Mushrooms:
If mushrooms are large, cut them in half; smaller ones can stay whole. -
Make the Marinade:
In a bowl, whisk together olive oil, garlic, soy sauce, lemon juice (or vinegar), herbs, salt, and pepper. -
Marinate:
Add mushrooms and toss to coat evenly. Let them marinate for 20–30 minutes (or up to 2 hours in the fridge) for deeper flavor. -
Skewer:
Thread the mushrooms onto skewers. If using wooden skewers, soak them in water for 20 minutes first to prevent burning. -
Grill or Bake:

Grill: Cook over medium heat for 10–12 minutes, turning occasionally until golden and tender.

Oven: Roast at 400°F (200°C) for 15 minutes, turning once halfway through.
