Garlic Chicken Fried Rice

Here’s a simple, flavorful Garlic Chicken Fried Rice recipe you can make in about 20 minutes 🍚🧄

Ingredients (2–3 servings)

  • 2 cups cooked rice (day-old, cold is best)
  • 1 cup chicken breast or thigh, diced
  • 4–6 cloves garlic, finely minced
  • 2 tbsp oil (vegetable or sesame + neutral oil mix)
  • 2 eggs, beaten
  • 2–3 tbsp soy sauce (adjust to taste)
  • 1 tsp oyster sauce (optional but recommended)
  • ½ tsp white or black pepper
  • ½ tsp sugar (optional, balances flavor)
  • 2 stalks green onions, chopped
  • Optional add-ins: peas, carrots, onions, chili flakes

Instructions

  1. Prepare the chicken
    • Heat 1 tbsp oil in a hot wok or pan.
    • Add chicken, season lightly with salt & pepper.
    • Stir-fry until cooked through and lightly golden. Remove and set aside.
  2. Garlic base
    • Add remaining oil.
    • Add garlic and stir quickly over medium heat until fragrant (don’t let it burn).
  3. Eggs
    • Push garlic to the side.
    • Pour in eggs, scramble lightly until just set.
  4. Rice
    • Add rice, breaking up clumps.
    • Stir-fry on high heat for 2–3 minutes until hot and slightly crispy.
  5. Season
    • Add soy sauce, oyster sauce, pepper, and sugar (if using).
    • Return chicken to the pan and toss well.
  6. Finish
    • Add green onions (and optional veggies).
    • Taste and adjust seasoning.
    • Serve hot.

Tips for Best Flavor

  • Use day-old rice to avoid sogginess.
  • High heat = better “wok hei” flavor.
  • Add a drizzle of sesame oil at the end for aroma.
  • For extra garlic punch, sprinkle a little fried garlic on top.
