For the dough:

  • 2 ½ cups all-purpose flour
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 tbsp instant yeast
  • 3 tbsp butter, melted
  • ¾ cup warm milk
  • 1 egg (optional, for richer dough)

For the filling:

  • Mozzarella cheese cubes or shredded mozzarella
  • Optional: a little cheddar for extra flavor

For the garlic butter:

  • 4 tbsp butter, melted
  • 3–4 garlic cloves, minced
  • 1 tbsp parsley or Italian seasoning
  • Pinch of salt

🧑‍🍳 Instructions

1. Make the dough

  1. In a bowl, mix flour, sugar, salt, and yeast.
  2. Add melted butter, warm milk, and egg (if using).
  3. Mix and knead 8–10 minutes until smooth and soft.
  4. Cover and let rise 1 hour or until doubled in size.

2. Form the rolls

  1. Punch down the dough and divide into 8–10 balls.
  2. Flatten each piece, place a cube of mozzarella in the center, and pinch the dough tightly to seal.
  3. Place seam-side down on a parchment-lined tray.
  4. Cover and let rise 20–30 minutes.

3. Bake

  1. Preheat oven to 375°F (190°C).
  2. Brush rolls lightly with melted butter.
  3. Bake 14–18 minutes, until lightly golden.

4. Garlic butter finish

  1. Mix melted butter, garlic, parsley, and a pinch of salt.
  2. Brush generously over hot rolls right out of the oven.
  3. Optional: sprinkle with parmesan.
