Garlic Butter Steak & Potatoes (One-Pan)

Ingredients (serves 2–3)

  • 1½ lb steak (ribeye, sirloin, or strip), cut into cubes or left whole
  • 1½ lb baby potatoes, halved
  • 3 tbsp olive oil, divided
  • Salt & black pepper, to taste
  • 1 tsp paprika
  • 1 tsp dried thyme or rosemary
  • 4 tbsp butter
  • 4–5 cloves garlic, minced
  • Optional: fresh parsley, red pepper flakes

Instructions

1. Cook the Potatoes

  1. Bring potatoes to a boil in salted water.
  2. Cook 10–12 minutes until just fork-tender. Drain and set aside.

2. Sear the Steak

  1. Pat steak dry and season generously with salt, pepper, and paprika.
  2. Heat 2 tbsp olive oil in a large skillet over high heat.
  3. Sear steak 2–3 minutes per side (or 2 minutes total for cubes).
  4. Remove steak and set aside.

3. Crisp the Potatoes

  1. In the same skillet, add remaining oil.
  2. Add potatoes cut-side down.
  3. Season with thyme/rosemary, salt, and pepper.
  4. Cook 5–7 minutes until golden and crispy.

4. Garlic Butter Magic ✨

  1. Reduce heat to medium.
  2. Add butter and garlic to skillet.
  3. Stir until fragrant (about 30 seconds).
  4. Return steak to pan and toss everything in garlic butter.

5. Finish & Serve

  • Cook together 1–2 more minutes.
  • Garnish with parsley or red pepper flakes.
  • Serve immediately.

  • Let steak rest at room temp 20 minutes before cooking.
  • Don’t overcrowd the pan—cook steak in batches if needed.
