Serves 2–4


Ingredients

For the steak bites

  • 1 lb (450 g) steak (sirloin, ribeye, or strip), cut into bite-sized cubes
  • 3 tbsp butter
  • 3 cloves garlic, minced
  • Salt & pepper
  • 1 tsp fresh thyme or rosemary (optional)

For the cheesy bowtie pasta

  • 8 oz (225 g) bowtie pasta (farfalle)
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 ½ cups milk
  • 1 ½ cups shredded cheddar cheese
  • Salt & pepper, to taste

Instructions

1. Cook the pasta

  1. Boil pasta in salted water according to package instructions. Drain and set aside.

2. Cook the steak bites

  1. Heat a large skillet over medium-high heat.
  2. Season steak bites with salt and pepper.
  3. Add butter to the skillet. Once melted, sauté steak bites 2–4 minutes per side until browned and cooked to your liking.
  4. Add minced garlic and herbs, cook 30–60 seconds until fragrant. Remove from skillet and keep warm.

3. Make the cheddar sauce

  1. In the same skillet, melt 2 tbsp butter over medium heat.
  2. Whisk in flour and cook 1–2 minutes to form a roux.
  3. Gradually whisk in milk until smooth.
  4. Simmer 3–5 minutes until slightly thickened.
  5. Stir in shredded cheddar until melted and smooth. Season with salt and pepper.

4. Combine pasta and sauce

  1. Add cooked bowtie pasta to the cheese sauce, stirring until fully coated.

5. Serve

  1. Plate cheesy pasta, then top with garlic butter steak bites.
  2. Spoon extra garlic butter from the skillet over the top for maximum flavor.
  3. Optional garnish: chopped parsley or extra shredded cheese.

Tips

  • For extra flavor: Sear steak bites in batches to avoid steaming.
  • Optional veggies: Toss in peas, spinach, or sautéed mushrooms for a complete meal.
  • Make-ahead: Pasta can be cooked ahead; steak is best fresh.
