Here’s a simple recipe to make these foil packets:

Ingredients

  • 1 lb sirloin steak or flank steak (cut into 1-inch cubes)
  • 4 medium-sized potatoes (Yukon Gold or Russet), diced into small cubes
  • 4 tbsp unsalted butter, melted
  • 3–4 garlic cloves, minced
  • 1 tsp dried rosemary (or fresh, if you have it)
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 1/2 tsp smoked paprika (optional for extra flavor)
  • Fresh parsley, chopped (for garnish, optional)
  • 1 tbsp olive oil (optional, for grilling)

Instructions

1. Prepare the ingredients:

  • Preheat your oven to 400°F (200°C), or heat the grill to medium-high heat.
  • Wash and scrub the potatoes, then dice them into small 1-inch cubes (so they cook evenly).
  • Cut the steak into 1-inch cubes or bite-sized pieces.

2. Make the garlic butter sauce:

  • In a small bowl, combine the melted butter, minced garlic, rosemary, thyme, smoked paprika, and a pinch of salt and pepper. Stir well to combine.

3. Assemble the foil packets:

  • Tear off 4 large pieces of aluminum foil (about 12 inches each).
  • In the center of each piece of foil, add a portion of the diced potatoes and steak. Drizzle each packet with the garlic butter mixture, then toss the potatoes and steak to coat them evenly with the butter and seasonings.
  • Fold the sides of the foil up to create a sealed packet. Make sure the packets are tightly sealed to prevent any steam from escaping.

4. Cook the packets:

  • Grill Method:
    • Place the foil packets on the grill and cook for about 25–30 minutes, flipping halfway through. Check for doneness after 25 minutes, making sure the potatoes are tender and the steak is cooked to your liking.
  • Oven Method:
    • Place the foil packets on a baking sheet and bake in the preheated oven for about 30–35 minutes, or until the potatoes are fork-tender and the steak is cooked through. Flip the packets halfway through if you want even cooking.

5. Serve:

  • Carefully open the foil packets (watch out for hot steam!) and serve the steak and potatoes directly from the packet or transfer to a plate.
  • Garnish with freshly chopped parsley and serve with extra garlic butter on the side, if desired.

Tips:

  • Potato prep: Make sure the potato cubes are about the same size so they cook evenly. If you like softer potatoes, you can microwave them for 5 minutes before adding them to the foil packet.
  • Steak options: Sirloin, flank steak, or ribeye are great choices for this recipe. If you prefer a different cut, just make sure it’s a tender cut that cooks quickly.
  • Veggie add-ins: Feel free to toss in some veggies, like carrots, onions, or bell peppers, to add more flavor and nutrition to your packets.
  • Cooking tip: If you’re grilling, you can brush the foil packets with a little olive oil before placing them on the grill to prevent sticking.
