Ingredients

  • 1 lb (450 g) smoked Polish sausage, sliced into 1/2-inch (1–2 cm) pieces

  • Salt and pepper, to taste

🥄 Instructions

  1. Prepare the potatoes:
    • Rinse diced potatoes in cold water to remove excess starch.
    • Pat dry with a kitchen towel for crispiness.
  2. Cook the sausage:
    • Heat 1 tablespoon of oil in a large skillet over medium heat.
    • Add the sliced Polish sausage and cook 3–4 minutes until lightly browned.
    • Remove the sausage from the skillet and set aside.
  3. Fry the potatoes:
    • Add remaining oil to the skillet.
    • Add diced potatoes, season with salt, pepper, and paprika.
    • Cook over medium heat, stirring occasionally, until potatoes are golden and almost tender, about 15–20 minutes.
  4. Add onions and sausage:
    • Add sliced onions to the skillet and sauté for 5–7 minutes until soft and caramelized.
    • Return the sausage to the skillet and stir to combine.
    • Cook 2–3 more minutes so flavors meld together.
  5. Serve:
    • Garnish with fresh parsley if desired.
    • Serve hot as a hearty breakfast, lunch, or dinner.

  • Extra crispiness: Parboil potatoes for 5 minutes before frying to make them crispier.
