    In another bowl, whisk milk, egg, melted butter, and vanilla extract if using.
  3. Combine:
    Pour wet ingredients into dry ingredients. Stir gently until just combined—lumps are okay. Overmixing makes pancakes tough.
  4. Heat the pan:
    Heat a non-stick or cast-iron skillet over medium heat. Add a small amount of butter or oil to coat the surface.
  5. Cook pancakes:
    • Pour ¼ cup batter onto the pan for each pancake.
    • Cook until bubbles form on the surface and edges look set (~2–3 minutes).
    • Flip and cook the other side until golden brown (~1–2 minutes).
  6. Serve warm:
    Serve with syrup, fruit, chocolate, or whatever toppings you love.

Tips for extra fluffiness:

  • Let the batter rest 5–10 minutes before cooking.
