French onion soup

Here’s a rich, deeply caramelized, classic French Onion Soup—comforting, flavorful, and topped with gooey melted cheese over toasted bread.


🧅 French Onion Soup (Traditional Bistro Style)

Ingredients (serves 4–6)

For the Soup

  • 4–5 large yellow onions, thinly sliced
  • 3 tbsp butter
  • 1–2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp sugar (helps caramelize)
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp flour (for thickening)
  • ½ cup dry white wine (optional but authentic)
  • 6 cups beef broth (or half beef/half chicken)
  • 1–2 tsp Worcestershire sauce (optional but delicious)
  • 1–2 fresh thyme sprigs OR ½ tsp dried thyme
  • 1 bay leaf

For the Topping

  • 1 baguette, sliced
  • 2 cups shredded Gruyère cheese
  • Optional: a bit of Swiss or mozzarella mixed in

Instructions

1. Caramelize the onions (most important step!)

  1. In a large pot or Dutch oven, heat butter and olive oil over medium heat.
  2. Add onions, salt, pepper, and sugar.
  3. Cook 30–45 minutes, stirring often, until onions are deeply golden-brown.
    • Lower heat if they start to burn.
  4. Add garlic and cook 1 minute more.

2. Build the soup

  1. Sprinkle flour over the caramelized onions; stir and cook 2 minutes.
  2. Add the wine to deglaze the pot, scraping up brown bits.
  3. Pour in beef broth.
  4. Add thyme and bay leaf.
  5. Simmer 20–30 minutes on low.
  6. Taste and adjust seasoning; remove bay leaf and thyme.

3. Prepare the cheesy bread

  1. Toast baguette slices until crisp.
  2. Sprinkle a little cheese on them and broil until melted.
    • (Or wait and melt the cheese on top of the soup.)

4. Assemble and broil

  1. Ladle hot soup into oven-safe bowls.
  2. Top with toasted baguette slices.
  3. Cover generously with Gruyère.
  4. Broil 2–4 minutes until bubbly and golden.

Serve

Let cool slightly (it’s lava-hot!) and enjoy.


Tips for the Best French Onion Soup

  • Caramelize onions slowly for deep flavor.
  • Mixing beef + chicken broth gives great balance.
  • Add a splash of sherry or cognac at the end for authentic French flavor.
  • Gruyère is classic, but Swiss or mozzarella works in a pinch.
