🥔 Potato and Ham Croquettes
Serves: 4
Prep Time: 20 minutes
Cook Time: 10–15 minutes
Chill Time: 30 minutes (optional, for easier shaping)
Ingredients
-
2 cups (450 g) mashed potatoes (cooled)
-
1/2 cup (75 g) diced cooked ham (or cooked chicken, turkey, or vegetables)
-
1/4 cup (25 g) grated cheese (optional)
-
1/4 tsp black pepper
-
1/4 tsp nutmeg (optional)
-
1–2 eggs, beaten
-
1 cup (100 g) breadcrumbs
-
Vegetable oil for frying
Instructions
1. Prepare the mixture
-
In a bowl, combine mashed potatoes, diced ham, cheese, pepper, and nutmeg.
-
Mix until well combined.
-
Chill in the fridge for 30 minutes if the mixture is too soft to shape.
2. Shape the croquettes
-
Take about 2 tablespoons of the mixture and shape into small cylinders or balls.
3. Coat
-
Roll each croquette in beaten egg, then coat with breadcrumbs.
-
For extra crispiness, double-dip: egg → breadcrumbs → egg → breadcrumbs.
4. Fry
-
Heat 1/2 inch of oil in a skillet over medium heat.
-
Fry croquettes in batches, 2–3 minutes per side, until golden brown.
-
Drain on paper towels.
5. Serve
-
Serve warm as an appetizer, side dish, or snack.
-
Optional dips: mustard, aioli, ketchup, or sour cream.
💡 Tips
-
Variations: Use cooked chicken, turkey, or seafood instead of ham.
-
Make-ahead: Freeze shaped croquettes before frying for quick meals later.
-
Crispier coating: Use panko breadcrumbs instead of regular breadcrumbs.
