Here’s a simple and flavorful recipe for Crock Pot Chicken and Onions—perfect for an easy, hands-off meal.


Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 2 large onions, sliced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika (optional)
  • 1 tsp dried thyme or rosemary
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep the Chicken:
    Season the chicken with salt, pepper, and paprika.
  2. Layer the Crock Pot:
    Place half of the sliced onions at the bottom. Lay the chicken on top, then cover with the remaining onions and garlic.
  3. Add Liquid & Herbs:
    Pour the chicken broth over everything and sprinkle with thyme or rosemary.
  4. Cook:
    • Low heat: 6–7 hours
    • High heat: 3–4 hours
      The chicken should be tender and easily shredded with a fork.
  5. Serve:
    Garnish with fresh parsley and serve with rice, mashed potatoes, or crusty bread to soak up the delicious juices.

💡 Tip: For extra flavor, sear the chicken in olive oil for 2–3 minutes per side before adding to the Crock Pot. This gives it a nice golden color and deeper taste.
