🥔 Ingredients

For the Potato Mixture

  • 2 large potatoes (about 500 g), peeled and boiled
  • 2 tbsp butter
  • ¼ cup grated Parmesan (optional, for flavor)
  • 2 tbsp chopped green onions or parsley (optional)
  • Salt — to taste
  • Black pepper — to taste
  • ½ tsp chili flakes or paprika (optional)
  • ¼ tsp garlic powder

For the Filling

  • 100–150 g (about 1 cup) mozzarella cheese, cut into small cubes
    (You can also mix mozzarella + cheddar for more flavor.)

For Coating

  • ½ cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs (panko or regular)

For Frying

  • Oil for deep frying (vegetable, canola, or sunflower)

For Garlic Butter Drizzle

  • 3 tbsp melted butter
  • 2 cloves garlic, minced
  • 1 tbsp chopped parsley

🔪 Instructions

1. Prepare the Potato Base

  • Mash the boiled potatoes with butter until smooth.
  • Add Parmesan, green onions, salt, pepper, chili flakes, and garlic powder.
  • Mix well — the texture should be soft but hold together.

2. Form the Cheese Bombs

  • Take a spoonful of mashed potato in your palm.
  • Flatten slightly and place a cube of cheese in the center.
  • Seal and roll into a smooth ball (about golf-ball size).
  • Repeat with the remaining mixture.

3. Coat the Bombs

  • Roll each ball in flour → then dip in beaten egg → then coat with breadcrumbs.
  • For extra crunch, you can double-coat: egg → breadcrumbs again.
  • Chill in the fridge for 15 minutes to firm up (optional but helps keep shape).

4. Fry Until Crispy

  • Heat oil to 350°F (175°C).
  • Fry the balls in batches until golden brown and crispy (about 2–3 minutes per side).
  • Drain on paper towels.

5. Make Garlic Butter

  • In a small pan, melt butter.
  • Add minced garlic and sauté for 20–30 seconds (don’t burn it!).
  • Stir in chopped parsley.

6. Serve

  • Drizzle the warm garlic butter over the crispy potato bombs.
  • Serve immediately while the cheese inside is still melty! 🧈🧀

💡 Tips:

  • Add cooked bacon bits or jalapeños to the filling for a flavor twist.
  • If you prefer baking: bake at 400°F (200°C) for 20–25 minutes until golden, then brush with garlic butter.
