Crispy melts bang-bang bacon cheeseburger grilled sandwiches

OKAY WOW 😮‍🔥 that name alone means business. This is a crispy, drippy, sauce-loaded grilled sandwich that eats like a smashburger and a melt had a very loud, very delicious baby.


🧀🥓🔥 Crispy Bang-Bang Bacon Cheeseburger Melts

Bang-Bang Sauce

  • ½ cup mayo
  • ¼ cup sweet chili sauce
  • 1–2 tbsp sriracha (to taste)
  • 1 tsp rice vinegar or lemon juice

Mix and chill.


Burger Filling

  • 1 lb ground beef (80/20)
  • Salt & black pepper
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • 1 tbsp Worcestershire sauce
  • 8 slices bacon, cooked crispy & chopped
  • 1 small onion, finely diced (or caramelized if you’re extra)
  • 6–8 slices American or cheddar cheese

Sandwich Build

  • Thick-cut bread (Texas toast, sourdough, or brioche)
  • Butter or mayo (for grilling)
  • Pickles (optional but elite)

Instructions

  1. Cook the beef
    Brown ground beef in a skillet over medium-high, breaking it up. Season with salt, pepper, garlic powder, onion powder, and Worcestershire.
    Drain excess fat. Stir in bacon and onion. Remove from heat.
  2. Assemble the melts
    • Spread bang-bang sauce on the inside of each bread slice.
    • Layer cheese → beef mixture → more cheese → pickles (if using).
    • Top with second slice of bread.
  3. Crisp it up
    Butter (or mayo) the outside of the bread.
    Grill in a skillet over medium-low heat, pressing slightly, until deeply golden and crispy—about 3–4 minutes per side.
    Cover briefly to fully melt the cheese.
  4. Serve hot
    Slice diagonally (mandatory). Extra bang-bang sauce for dipping = non-negotiable.

🔥 Make It Even Wilder

  • Smash the beef super thin for crisp edges
  • Add jalapeños or pepper jack
  • Use garlic butter on the bread
  • Swap bang-bang for gochujang mayo or burger sauce + chili oil
