🍗 Crispy Fried Chicken Wings

Ingredients (serves 4 / ~2 lbs wings):

  • 2 lbs chicken wings, split at joint, tips removed
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika (smoked or regular)
  • ½ tsp cayenne pepper (optional, for heat)
  • 1 cup all-purpose flour
  • Oil for frying (vegetable, canola, or peanut oil)

Optional sauce: Buffalo, BBQ, honey garlic, or your favorite wing sauce


Instructions

  1. Prep wings:
    • Pat wings dry with paper towels (key for crispiness).
    • Season with salt, pepper, garlic powder, paprika, and cayenne.
  2. Coat wings:
    • Place flour in a large bowl or ziplock bag.
    • Dredge wings in flour until evenly coated. Shake off excess.
  3. Heat oil:
    • Heat 2–3 inches of oil in a deep pan or Dutch oven to 350°F (175°C).
  4. Fry wings:
    • Fry wings in batches for 8–10 minutes, turning halfway, until golden brown and internal temp reaches 165°F (74°C).
    • Drain on paper towels.
  5. Toss in sauce (optional):
    • While hot, toss wings in your choice of wing sauce for extra flavor.

Tips & Variations:

  • Extra crispy: Double-fry wings—first at 325°F (160°C) for 8 minutes, rest 5 minutes, then fry at 375°F (190°C) until golden.
  • Oven-baked alternative: Bake at 425°F (220°C) for 35–40 min, flipping halfway, for a healthier version.
  • Flavor variations: Try lemon pepper, garlic parmesan, or Cajun spice instead of the basic seasoning.
  • Serving: Serve with celery sticks, carrot sticks, and ranch or blue cheese dressing.
