Here’s a golden, ultra-crispy fried chicken recipe with juicy meat and a crunchy, seasoned crust—just like classic Southern-style fried chicken.


⭐ Crispy Fried Chicken (Classic Southern Style)

Ingredients

Chicken

  • 3–4 lbs chicken pieces (legs, thighs, breasts, wings)
  • 2 cups buttermilk
  • 2 eggs
  • 1 tbsp hot sauce (optional but recommended)
  • 1 tsp salt
  • 1 tsp black pepper

Seasoned Flour

  • 2 cups all-purpose flour
  • ½ cup cornstarch (for extra crunch)
  • 2 tsp paprika
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp cayenne (optional for heat)

For Frying

  • Oil (vegetable, canola, or peanut)
  • Target oil temp: 325–350°F (165–175°C)

Instructions

1. Marinate the chicken

  1. In a large bowl, whisk buttermilk, eggs, hot sauce, salt, and pepper.
  2. Add chicken pieces.
  3. Cover and refrigerate at least 2 hours, or overnight for best results.

2. Prepare the breading

  1. Mix flour, cornstarch, and all seasonings in a large bowl or bag.
  2. Remove chicken from buttermilk—let excess drip off.
  3. Coat well in the seasoned flour, pressing it on to create craggy, crispy bits.

Extra Crispy Method (Double Coat)

  • Dip floured chicken back into the buttermilk, then into flour again.

3. Fry the chicken

  1. Heat oil to 325–350°F.
  2. Fry chicken in batches—don’t overcrowd the pan.
    • Dark meat: 13–16 minutes
    • White meat: 10–12 minutes
  3. Only flip once halfway through.
  4. Place cooked chicken on a wire rack (not paper towels) so it stays crispy.

4. Rest & Serve

  • Let chicken rest 5–10 minutes so the crust sets.
  • Serve hot!

⭐ Tips for Perfect Crispy Fried Chicken

  • Cornstarch = super crunchy crust.
  • Letting the fried chicken rest on a rack keeps it crisp.
  • Use a thermometer—don’t guess the oil temp.
  • Add a tablespoon of baking powder to the flour for even crispier breading.
  • For spicier chicken, add more cayenne or coat in hot sauce before flouring.
