For the Salmon

  • 1–1.5 lbs salmon (skin removed), cut into 1-inch cubes

Bang Bang Sauce

  • ¼ cup mayonnaise
  • 2–3 tbsp sweet chili sauce

  • 1 tsp honey or sugar (optional for more sweetness)
  • 1 tsp lime juice or rice vinegar (optional, adds tang)

Optional Garnish

  • Sesame seeds

🔥 Instructions

1. Prep the salmon

  1. Pat salmon dry very well (helps crispiness).
  2. Toss cubes with salt, pepper, garlic powder, and paprika.
  3. Sprinkle cornstarch and toss until lightly coated.

2. Cook the salmon

Air Fry (fastest + crispiest):

  • Add lightly oiled salmon cubes to basket in a single layer.
  • Air fry 400°F (205°C) for 7–9 minutes, shaking halfway until crispy and golden.

Pan Fry:

  • Heat 1–2 tbsp oil over medium-high.
  • Add salmon cubes and sear 2–3 min per side until crisp and cooked through.

Oven:

  • Bake at 425°F (220°C) for 12–14 minutes, broil last minute for extra crisp.

3. Make Bang Bang Sauce

Whisk together:

  • mayo
  • sweet chili
  • sriracha
  • honey
  • lime/vinegar

Taste and adjust—more chili for sweetness, more sriracha for spice.


4. Toss & Serve

  • Add hot salmon to a bowl.
  • Drizzle or toss with Bang Bang sauce (light coat = crispier, heavy coat = saucier).
  • Top with green onions + sesame seeds.
