Ingredients

For the Pasta:

  • 12 oz pasta (linguine, fettuccine, or spaghetti work well)
  • Salt (for the pasta water)

For the Shrimp:

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1/2 tsp smoked paprika (optional)
  • 1/4 tsp salt
  • 1/4 tsp black pepper

For the Creamy Sauce:

  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine (optional; you can use chicken broth or vegetable broth instead)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chicken broth (or vegetable broth)
  • 1/4 tsp red pepper flakes (optional, for a little heat)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Zest of 1 lemon (optional, for a fresh kick)

Instructions

1. Cook the Pasta:

  • Bring a large pot of salted water to a boil.
  • Cook the pasta according to the package instructions until al dente (usually about 9-10 minutes). Reserve 1/2 cup of pasta water before draining.
  • Drain the pasta and set it aside.

2. Prepare the Shrimp:

  • While the pasta is cooking, season the shrimp with salt, black pepper, and smoked paprika (if using).
  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the shrimp in a single layer and cook for about 2-3 minutes per side, or until they turn pink and opaque. Remove the shrimp from the pan and set aside.

3. Make the Creamy Sauce:

  • In the same skillet, add the butter and let it melt.
  • Add the garlic and sauté for 30 seconds until fragrant.
  • Pour in the white wine (or chicken broth) and let it simmer for about 2-3 minutes, reducing slightly.
  • Stir in the heavy cream, chicken broth, and red pepper flakes (if using). Bring to a gentle simmer and cook for another 3-4 minutes, until the sauce thickens slightly.
  • Add the Parmesan cheese and stir until melted and smooth.
  • Taste and adjust seasoning with salt and pepper if needed.

4. Combine the Shrimp and Pasta:

  • Add the cooked pasta directly to the skillet with the creamy sauce. Toss well to coat the pasta in the sauce.
  • Return the cooked shrimp to the skillet and gently stir to combine, allowing the shrimp to reheat in the sauce.
  • If the sauce is too thick, add a little bit of the reserved pasta water to thin it out to your desired consistency.

5. Finish and Serve:

  • Serve the creamy shrimp pasta immediately, garnished with fresh parsley and a sprinkle of lemon zest (if using) for extra brightness.
  • Optionally, you can top with extra grated Parmesan or a squeeze of fresh lemon juice.

Tips:

  • Make it spicier: Add extra red pepper flakes or a dash of cayenne pepper to give the sauce a spicy kick.
  • Add vegetables: Feel free to add sautéed vegetables like spinach, tomatoes, or asparagus to enhance the dish and add more color.
  • For a lighter version: You can use half-and-half or milk instead of heavy cream, though the sauce will be a bit less rich.
