Creamy Pork Chops with Potatoes

Ingredients

  • 4 boneless or bone-in pork chops
  • Salt & black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 2 tbsp olive oil or butter
  • 1½ lbs baby potatoes, halved (or thinly sliced potatoes)
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 tsp dried thyme or Italian seasoning
  • Optional: fresh parsley for garnish

Instructions

  1. Season & sear pork
    • Season pork chops with salt, pepper, garlic powder, and paprika.
    • Heat oil/butter in a large skillet over medium-high heat.
    • Sear pork chops 3–4 minutes per side until golden.
    • Remove and set aside.
  2. Cook potatoes
    • In the same skillet, add potatoes.
    • Cook 5–7 minutes, stirring occasionally, until lightly browned.
    • Add garlic and cook 30 seconds.
  3. Make creamy sauce
    • Pour in chicken broth; scrape up browned bits.
    • Stir in cream, Parmesan, and thyme.
    • Bring to a gentle simmer.
  4. Finish cooking
    • Return pork chops to the skillet.
    • Cover and simmer on low for 12–15 minutes, until pork is cooked through and potatoes are tender.
  5. Serve
    • Garnish with parsley and serve hot.

  • Swap cream for half-and-half for a lighter version.
