Creamed Chipped Beef on Toast — affectionately (and humorously) known as “SOS” or “Sht on a Shingle”* — is a beloved old-fashioned American comfort food. It’s simple, salty, creamy, and hearty — a classic from diners, the military, and Grandma’s kitchen alike. 🍞🥩🥛


🥣 Classic Creamed Chipped Beef on Toast Recipe

Ingredients

  • 2 tbsp butter

  • 2 tbsp all-purpose flour

  • 2 cups milk (whole milk preferred)

  • 1 jar (2.5 oz) dried beef, sliced or chopped

  • 1/4 tsp black pepper (or to taste)

  • Optional: pinch of cayenne or paprika

  • Optional: 1–2 tbsp cream or half-and-half (for extra richness)

  • 4–6 slices of toast (white, wheat, or Texas toast)


Instructions

  1. Prepare the beef:

    • Rinse the dried beef briefly under cold water to remove excess salt.

    • Pat dry, then slice or chop into bite-sized pieces.

  2. Make the roux:

    • In a skillet or saucepan, melt butter over medium heat.

    • Whisk in flour and cook 1–2 minutes until bubbly (don’t let it brown).

  3. Add milk:

    • Gradually whisk in milk until smooth. Continue stirring until mixture thickens (about 5 minutes).

  4. Add beef and season:

    • Stir in the chopped beef.

    • Season with pepper (and cayenne or paprika if desired).

    • Cook another 2–3 minutes until heated through.

    • Adjust consistency with a little more milk if too thick.

  5. Serve:

    • Spoon the creamed beef generously over buttered toast.

    • Sprinkle with a bit of parsley or paprika for color if you like.

  • Traditionally served on toast, but also delicious over:

    • Biscuits

    • Mashed potatoes

    • Scrambled eggs

    • Rice


🧂 Tips

  • If you prefer less salty flavor, rinse the dried beef twice.

  • For a richer sauce, add a splash of cream or use evaporated milk.

  • Want a Southern twist? Add a dash of hot sauce or cracked black pepper gravy style.
