Classic Vanilla Cream Pie
Ingredients
Crust
- 1 pre-baked 9-inch pie crust (store-bought or homemade)
Filling
- 2½ cups whole milk
- ¾ cup sugar
- ¼ cup cornstarch
- ¼ tsp salt
- 4 large egg yolks
- 2 tbsp butter
- 2 tsp vanilla extract
Topping
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- ½ tsp vanilla
Instructions
- Heat the milk
In a saucepan over medium heat, warm the milk until steaming (not boiling). - Mix dry + yolks
In a bowl, whisk sugar, cornstarch, salt, and egg yolks until smooth. - Temper the eggs
Slowly pour about 1 cup of the hot milk into the egg mixture while whisking. - Thicken the custard
Pour everything back into the saucepan. Cook over medium heat, whisking constantly, until thick and bubbling (2–3 minutes). - Finish the filling
Remove from heat. Stir in butter and vanilla. - Fill the crust
Pour custard into the baked crust. Press plastic wrap directly onto the surface to prevent a skin. - Chill
Refrigerate at least 4 hours (overnight is even better). - Whipped cream topping
Beat heavy cream, powdered sugar, and vanilla until soft peaks form. Spread or pipe on top.
Variations
- Chocolate cream pie: Add ½ cup chopped chocolate to the hot custard.
- Banana cream pie: Layer sliced bananas on the crust before adding filling.
- Coconut cream pie: Add 1 cup toasted coconut to the custard.
