Crawfish Fries with Creamy Queso Sauce

Ingredients

For the Fries

  • ½ tsp smoked paprika or chili powder (optional)
  • Salt & pepper to taste

Optional Toppings

  • Chopped green onions
  • Fresh parsley or cilantro
  • Sliced jalapeños for heat

Instructions

1. Prepare the Fries

  1. Preheat oven to 425°F (220°C).
  2. Toss potato fries with oil, paprika, garlic powder, salt, and pepper.
  3. Spread on a baking sheet in a single layer.
  4. Bake 25–30 minutes, flipping halfway, until golden and crisp.

2. Cook the Crawfish

  1. In a skillet, melt butter over medium heat.
  2. Add onion and garlic; sauté until soft and fragrant.
  3. Add crawfish, smoked paprika, Cajun seasoning, salt, and pepper.
  4. Cook 3–5 minutes, just until heated through.

3. Make the Queso Sauce

  1. In a small saucepan, melt butter over medium heat.
  2. Stir in flour to make a roux, cooking 1–2 minutes.
  3. Gradually whisk in milk until smooth.
  4. Add shredded cheese and spices; stir until melted and creamy.
  5. Adjust seasoning with salt and pepper.

4. Assemble Crawfish Fries

  1. Place fries on a serving platter.
  2. Spoon crawfish mixture evenly over fries.
  3. Drizzle warm queso sauce on top.
  4. Garnish with green onions, parsley, or jalapeños.

  • Crispier fries: Bake directly on a foil-lined sheet without crowding.
  • Spicy kick: Add hot sauce or cayenne to the queso sauce.
