Absolutely! Here’s a classic, chewy, and loaded Cowboy Cookies recipe you can make at home:

Cowboy Cookies Recipe

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 cups old-fashioned rolled oats
  • 1 cup semi-sweet chocolate chips
  • 1 cup shredded coconut
  • 1 cup chopped pecans or walnuts
  • Optional: 1/2 cup raisins

Instructions:

  1. Preheat oven: 350°F (175°C). Line baking sheets with parchment paper.
  2. Mix wet ingredients: In a large bowl, cream together butter, brown sugar, and granulated sugar until smooth. Beat in eggs, one at a time, then add vanilla.
  3. Mix dry ingredients: In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture and mix until combined.
  4. Add mix-ins: Stir in oats, chocolate chips, coconut, nuts, and raisins (if using).
  5. Scoop cookies: Drop rounded tablespoons of dough onto prepared baking sheets, leaving about 2 inches between cookies.
  6. Bake: 10–12 minutes, or until edges are lightly golden. The centers will be soft but will firm up as they cool.
  7. Cool: Let cookies sit on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

✅ Tips:

  • For extra chewiness, slightly underbake them.
  • Toasting the coconut and nuts lightly before mixing gives an extra depth of flavor.
  • These freeze well—perfect for a quick snack anytime.

If you want, I can also give you a “super indulgent cowboy cookies” version with extra chocolate and a bit of caramel drizzle—it’s basically the dessert version of a hug.

Do you want me to do that?
