🥔 Country Ranch Green Beans & Potatoes with Bacon

Ingredients:

  • 6 slices thick-cut bacon

  • 1½ lbs baby red potatoes, quartered (or Yukon golds, cubed)

  • 1 lb fresh green beans, trimmed (or 2 cans drained)

  • 1 packet (1 oz) ranch seasoning mix (like Hidden Valley)

  • 2 tbsp butter (or bacon drippings for extra flavor)

  • Salt & black pepper, to taste

  • Optional: ½ small onion, diced

  • Optional garnish: chopped parsley or extra crumbled bacon


Instructions:

  1. Cook the bacon:
    In a large skillet or Dutch oven, cook bacon until crispy.
    Remove, crumble, and set aside — but leave about 2 tbsp of bacon grease in the pan.

  2. Sauté the potatoes:
    Add potatoes to the skillet with the bacon grease (and onion if using).
    Sauté for 8–10 minutes over medium heat until they start to brown.

  3. Add the green beans:
    Stir in the green beans, butter, and ranch seasoning mix.
    Toss well to coat everything evenly.

  4. Steam and cook through:
    Add about ½ cup water or chicken broth, cover, and simmer for 10–12 minutes, or until potatoes are tender and beans are soft but still bright green.

  5. Add bacon and season:
    Stir in the crumbled bacon, season with salt and pepper to taste, and cook uncovered for another 2–3 minutes to blend flavors.

  6. Serve warm:
    Transfer to a serving bowl and top with a little more bacon or parsley if you like.
