Country fried steak with cream gravy

Here’s a classic Southern Country Fried Steak with Cream Gravy recipe — crispy, tender cube steaks smothered in rich, peppery white gravy. This is true comfort food done right.


🥩 Country Fried Steak with Cream Gravy

Ingredients

For the Steaks:

  • 4 cube steaks (or tenderized round steaks)
  • 1 1/2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 large eggs
  • 1/4 cup milk or buttermilk
  • Oil for frying (vegetable, canola, or peanut)

For the Cream Gravy:

  • 1/4 cup reserved frying oil (with browned bits)
  • 1/4 cup all-purpose flour
  • 2–2 1/2 cups milk
  • Salt and pepper to taste (lots of pepper makes it classic!)

Instructions

1. Prep the dredging station

  • Bowl 1: Flour, salt, pepper, paprika, garlic powder, onion powder
  • Bowl 2: Eggs whisked with milk/buttermilk

2. Dredge the steaks

  1. Pat steaks dry.
  2. Dip into flour mixture → egg mixture → back into the flour mixture.
  3. Press the flour on firmly to get a thick crust.
  4. Place on a plate to rest 5–10 minutes (helps coating stick).

3. Fry the steaks

  1. Heat 1/4–1/2 inch of oil in a cast iron skillet over medium to medium-high heat.
  2. When hot (350°F if testing), add steaks without crowding.
  3. Cook 3–4 minutes per side until deep golden brown.
  4. Remove steaks and place on a wire rack or paper towels.
  5. Do not discard all the oil — keep about 1/4 cup with browned bits for gravy.

🥣 4. Make the Cream Gravy

  1. In the skillet with the reserved oil, whisk in 1/4 cup flour.
  2. Cook 1–2 minutes to create a light roux.
  3. Slowly whisk in milk until smooth (start with 2 cups).
  4. Simmer and thicken 3–5 minutes.
  5. Season heavily with black pepper and salt to taste.

If it gets too thick, add a splash more milk.


5. Serve

Plate the crispy steaks and ladle hot cream gravy over the top.
Perfect with mashed potatoes, biscuits, corn, or green beans.


⭐ Tips for Perfect Country Fried Steak

  • Use cube steaks — they’re already tenderized.
  • Let the coated steaks rest before frying to prevent breading loss.
  • Don’t fry too hot or the crust will burn before the steak cooks.
  • Add 1 tbsp cornstarch to the flour mix for an extra crispy crust.
