Brownie Mix Cookies

Ingredients

  • 1 box brownie mix (any brand, ~18–20 oz)
  • 2 eggs
  • ¼ cup vegetable oil or melted butter
  • 2–4 tbsp water (optional, depending on mix)
  • 1 tsp vanilla extract (optional but adds depth)
  • Optional add-ins: chocolate chips, nuts, or caramel bits

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment.
  2. In a bowl, mix brownie mix, eggs, oil, and vanilla until combined. Batter will be thicker than typical brownie batter—almost dough-like.
  3. Scoop tablespoons of batter onto the sheet, spaced about 2 inches apart.
  4. Bake 10–12 minutes, until edges are set but centers are soft. Don’t overbake—they continue to firm up as they cool.
  5. Let cool on the pan 5 minutes, then transfer to a wire rack.
