Chocolate Peanut Butter Rice Krispies Roll

Ingredients

  • 3 cups Rice Krispies cereal

  • 1/4 cup honey or corn syrup
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

1. Prepare the pan

  • Line a 9×13-inch (23×33 cm) pan with parchment paper and lightly grease it.

2. Make the peanut butter mixture

  1. In a medium saucepan over medium heat, melt butter, peanut butter, brown sugar, and honey.
  2. Stir constantly until smooth and slightly bubbling (about 2–3 minutes).
  3. Remove from heat and stir in vanilla extract.

3. Mix with Rice Krispies

  • Pour the peanut butter mixture over the Rice Krispies cereal. Stir quickly to coat all the cereal evenly.

4. Shape the roll

  1. Transfer the mixture to the prepared pan.
  2. Press firmly into an even rectangle (about 1 inch thick). Let it cool for a few minutes.

5. Add the chocolate topping

  1. Melt the chocolate chips (in a microwave in 20-second intervals, stirring each time).
  2. Spread melted chocolate evenly over the Rice Krispies layer.

6. Roll it up

  • Let the chocolate set slightly (so it’s not too runny), then carefully roll the rectangle like a jelly roll using the parchment paper as a guide.

7. Chill and serve

  • Place the roll in the fridge for at least 30 minutes to firm up.
  • Slice into 1-inch pieces and enjoy!

Tips:

  • For extra flair, drizzle more melted chocolate or sprinkle crushed peanuts on top before chilling.
  • You can swap half the chocolate for peanut butter chocolate chips for an extra peanut-buttery punch.
