Here’s a homemade Chocolate Nougat Bars recipe—chewy, fluffy nougat layered with rich chocolate, just like classic candy bars.


Chocolate Nougat Bars

Ingredients

Nougat Layer

  • 1½ cups granulated sugar
  • ⅔ cup light corn syrup
  • ¼ cup water
  • 2 egg whites (room temperature)
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ cup chopped nuts (peanuts, almonds, or hazelnuts — optional)

Chocolate Coating

  • 2½ cups semi-sweet or milk chocolate chips
  • 2 tablespoons coconut oil or shortening

Instructions

1. Prepare the Pan

Line an 8×8-inch pan with parchment, leaving overhang.

2. Make the Sugar Syrup

In a saucepan, combine sugar, corn syrup, and water.
Cook over medium heat (no stirring) until the mixture reaches 250°F (firm-ball stage).

3. Whip the Egg Whites

While syrup cooks, beat egg whites and salt until stiff peaks form.

4. Make the Nougat

Slowly pour hot syrup into egg whites while mixing on low speed.
Increase to medium-high and beat 5–7 minutes until thick, glossy, and warm.
Mix in vanilla and nuts (if using).

5. Set the Nougat

Spread nougat evenly into prepared pan.
Let set 1–2 hours at room temperature.

6. Chocolate Coating

Melt chocolate with coconut oil until smooth.

7. Assemble Bars

  • Lift nougat out and cut into bars.
  • Dip or coat each bar with chocolate.
  • Place on parchment and let set completely.

Tips for Success

  • Use a candy thermometer for accuracy.
  • Lightly oil your knife for clean cuts.
  • For extra chew, beat nougat slightly less.
  • Store bars layered with parchment.

Variations

  • Three-layer bar: add caramel under the nougat
  • Peanut butter nougat
  • Dark chocolate + sea salt
  • Honey nougat (replace half corn syrup with honey)
