Chocolate covered brownie bars

Here’s a recipe for Chocolate Covered Brownie Bars—rich, fudgy brownies coated in a smooth chocolate layer.


Ingredients (for 12 bars)

For the Brownies:

  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder

For the Chocolate Coating:

  • 1 cup semi-sweet or milk chocolate chips
  • 1 tbsp coconut oil or butter (optional, for shine and smoothness)

Instructions

1. Make the Brownies:

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix melted butter and sugar until combined.
  3. Add eggs and vanilla, and beat until smooth.
  4. Stir in cocoa powder, flour, salt, and baking powder until just combined.
  5. Pour batter into prepared pan and smooth the top.
  6. Bake 20–25 minutes, or until a toothpick inserted comes out with a few moist crumbs. Let cool completely.

2. Prepare the Chocolate Coating:

  1. In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals, stirring in between until smooth.

3. Assemble the Bars:

  1. Remove brownies from pan and cut into bars once cooled.
  2. Dip or drizzle each bar with melted chocolate, or spread chocolate over the top.
  3. Place bars on a parchment-lined tray and refrigerate 15–20 minutes until chocolate sets.

4. Serve:

  • Store in an airtight container at room temperature for up to 3 days, or in the fridge for longer.

💡 Tips:

  • For extra texture, sprinkle chopped nuts or sea salt over the chocolate before it sets.
  • You can use dark chocolate, milk chocolate, or white chocolate for variety.
  • For fudgier brownies, slightly underbake them by a minute or two.
