Chocolate chip cookie dough brownie bites

Here it is — a killer dessert combo: fudgy brownies stuffed or topped with edible chocolate-chip cookie dough. No baking the cookie dough, totally safe to eat, and dangerously delicious!


🍫 Chocolate Chip Cookie Dough Brownie Bites

Ingredients

For the brownie base

(Use homemade or boxed — either works)

  • ½ cup (1 stick) unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ⅓ cup cocoa powder
  • ½ cup all-purpose flour
  • ¼ tsp salt
  • ¼ tsp baking powder

OR
Use your favorite boxed fudge brownie mix.


For the edible cookie dough

  • ½ cup (1 stick) unsalted butter, softened
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 2 tbsp milk or heavy cream
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour (HEAT-TREATED — see note)
  • ¼ tsp salt
  • ½ cup mini chocolate chips

⭐ Heat-treating flour (IMPORTANT)

Spread flour on a baking sheet and heat at 350°F (175°C) for 5 minutes to make it safe to eat raw. Cool before using.


⭐ Instructions

1. Make brownie bites

  1. Preheat oven to 350°F (175°C).
  2. Line a mini muffin pan with liners or grease very well.
  3. Mix brownie ingredients (or prepare box mix as directed).
  4. Fill each mini muffin cup about ½ full.
  5. Bake 10–12 minutes, until set but still fudgy.
  6. Let cool completely.

2. Make edible cookie dough

  1. In a bowl, beat butter, brown sugar, and granulated sugar until creamy.
  2. Add milk and vanilla.
  3. Mix in cooled heat-treated flour and salt.
  4. Fold in mini chocolate chips.
  5. Chill 15 minutes to firm up.

3. Assemble the bites

Two options:

A. Scooped on top (pretty + easy)

Place a small scoop of cookie dough on each cooled brownie bite.

B. Stuffed inside (extra decadent)

  1. Roll a tiny ball of cookie dough.
  2. Place into the center of each brownie batter cup before baking.
  3. Bake as instructed.

⭐ Optional toppings

  • Drizzle melted chocolate
  • Extra mini chocolate chips
  • Caramel drizzle
  • Sea salt flakes

⭐ Tips

  • Chilling the cookie dough helps it hold shape.
  • Don’t overbake the brownies — fudgy is best.
  • Mini muffin pans make the perfect bite-size treats.
