Absolutely! Chicken taquitos are crispy, cheesy, and packed with flavor. Here’s a complete recipe for Crispy Chicken Taquitos that you can easily make at home:

Ingredients

For the Chicken Filling:

  • 2 cups cooked chicken, shredded (rotisserie chicken works great)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • ¼ cup cream cheese, softened
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp cumin
  • ½ tsp chili powder (optional, for a bit of heat)
  • Salt and pepper to taste
  • 2–3 tbsp chopped fresh cilantro (optional)

For the Taquitos:

  • 8–10 small corn or flour tortillas
  • 2–3 tbsp vegetable oil (for frying) OR cooking spray (for baking)

Optional Dipping Sauces:

  • Sour cream
  • Guacamole
  • Salsa
  • Queso

Instructions

1. Prepare the Filling:

  1. In a medium bowl, combine shredded chicken, shredded cheese, cream cheese, garlic powder, onion powder, cumin, chili powder, salt, pepper, and cilantro. Mix until well combined.

2. Assemble the Taquitos:

  1. Warm tortillas slightly in a microwave or on a skillet to make them pliable.
  2. Spoon about 2–3 tablespoons of the chicken mixture onto one end of each tortilla.
  3. Roll the tortilla tightly around the filling and place seam-side down on a plate.

3. Cook the Taquitos:

Option 1: Frying (Extra Crispy)

  1. Heat about ½ inch of vegetable oil in a skillet over medium-high heat.
  2. Fry taquitos seam-side down for 2–3 minutes per side until golden and crispy.
  3. Drain on paper towels.

Option 2: Baking (Healthier)

  1. Preheat oven to 425°F (220°C).
  2. Place taquitos seam-side down on a baking sheet lined with parchment paper.
  3. Lightly brush or spray with oil.
  4. Bake for 15–20 minutes, flipping halfway, until golden and crispy.

4. Serve:

  • Serve hot with sour cream, guacamole, salsa, or your favorite dipping sauce.
  • Sprinkle extra cheese or cilantro on top for garnish if desired.

Tips:

  • For extra flavor, add a squeeze of lime juice or a dash of hot sauce to the chicken mixture.
  • You can prep them ahead of time and freeze before cooking—just bake or fry from frozen, adding a few extra minutes.
  • If tortillas crack while rolling, microwave them for 15–20 seconds to make them more flexible.

If you want, I can also give you a crispy air-fryer version that’s even faster and super crunchy without frying in oil.

Do you want me to do that?
