Here’s a creamy and comforting Chicken Stroganoff recipe! 🍗🍄 This dish is a twist on the classic beef stroganoff, using tender chicken in a rich, flavorful sauce made with mushrooms, sour cream, and a touch of mustard. It’s quick and easy to make but feels indulgent — perfect for a weeknight dinner!


🥘 Ingredients (Serves 4)

  • 1 lb (450 g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil (for cooking)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup sliced mushrooms (button or cremini mushrooms work great)
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
  • 1 tablespoon Dijon mustard (optional, for depth of flavor)
  • 1 teaspoon paprika
  • 1 cup chicken broth
  • 1/2 cup sour cream
  • 1/2 cup heavy cream (or whole milk for a lighter version)
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)
  • Cooked egg noodles, rice, or mashed potatoes (for serving)

🥄 Instructions

  1. Cook the chicken:
    • Heat 1 tablespoon of olive oil in a large skillet or sauté pan over medium heat.
    • Add the chicken pieces and season with salt, pepper, and paprika.
    • Cook the chicken for 5–7 minutes until browned and cooked through.
    • Remove the chicken from the pan and set aside.
  2. Sauté the veggies:
    • In the same pan, add the remaining tablespoon of olive oil.
    • Add the chopped onion and cook for 3-4 minutes until softened.
    • Add the garlic and sliced mushrooms, and sauté for another 4-5 minutes, until the mushrooms are tender and beginning to brown.
  3. Make the sauce:
    • Stir in the thyme and Dijon mustard (if using).
    • Add the chicken broth and bring to a simmer. Let it cook for 3–4 minutes, reducing slightly.
    • Lower the heat, then stir in the sour cream and heavy cream. Cook for another 2-3 minutes, allowing the sauce to thicken.
  4. Combine the chicken and sauce:
    • Return the cooked chicken to the pan and stir until the chicken is coated in the creamy sauce.
    • Simmer for an additional 3–4 minutes to allow the flavors to meld together. Adjust the seasoning with salt and pepper to taste.
  5. Serve:
    • Serve the chicken stroganoff over cooked egg noodles, rice, or mashed potatoes.
    • Garnish with fresh parsley for a pop of color and freshness.

💡 Tips:

  • Use chicken thighs for a juicier, more flavorful option.
  • If you prefer a lighter version, you can swap the sour cream for Greek yogurt or use half-and-half instead of heavy cream.
  • For added flavor, try adding a splash of white wine or a few tablespoons of sherry when deglazing the pan with the chicken broth.
  • Vegetarian option: Replace the chicken with hearty vegetables like cauliflower or lentils for a vegetarian version. You could also use tofu or tempeh for protein.
