  2. Add chicken & mix-ins:
    Stir in chicken, celery, onion, grapes/cranberries, and nuts if using. Mix gently until well coated.
  3. Chill:
    Cover and refrigerate at least 30 minutes for best flavor.
  4. Assemble croissants:
    Slice croissants horizontally. Add lettuce if using, then spoon in chicken salad.
  5. Serve:
    Best served chilled or slightly cool.
