🍝 Chicken Mozzarella Cajun Pasta
Ingredients
For the chicken:

2 boneless, skinless chicken breasts

1–2 tablespoons Cajun seasoning (store-bought or homemade — see below)

1 tablespoon olive oil or butter
For the pasta and sauce:

8 oz (225 g) penne, fettuccine, or your favorite pasta

1 tablespoon butter

1 tablespoon olive oil

3 cloves garlic, minced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup heavy cream (or half-and-half for lighter sauce)

½ cup grated mozzarella cheese

¼ cup grated Parmesan cheese

Salt and pepper, to taste

Extra Cajun seasoning, to taste

Instructions

Cook the pasta:
Boil pasta in salted water according to package directions. Drain and set aside. -
Cook the chicken:

Season both sides of the chicken breasts generously with Cajun seasoning.

In a skillet over medium-high heat, heat olive oil or butter.

Cook chicken for 4–5 minutes per side, until golden brown and cooked through.

Remove from pan, let rest a few minutes, then slice thinly.

Make the sauce:

In the same skillet, add a bit more butter and olive oil if needed.

Sauté garlic and sliced bell peppers for 2–3 minutes until slightly tender.

Pour in the heavy cream and bring to a gentle simmer.

Stir in mozzarella and Parmesan until melted and creamy.

Season with salt, pepper, and extra Cajun seasoning to taste.

Add the cooked pasta and sliced chicken to the skillet.

Toss everything together until well coated in sauce.
