🍝 Chicken Mozzarella Cajun Pasta

Ingredients

For the chicken:

  • 2 boneless, skinless chicken breasts

  • 1–2 tablespoons Cajun seasoning (store-bought or homemade — see below)

  • 1 tablespoon olive oil or butter

For the pasta and sauce:

  • 8 oz (225 g) penne, fettuccine, or your favorite pasta

  • 1 tablespoon butter

  • 1 tablespoon olive oil

  • 3 cloves garlic, minced

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 cup heavy cream (or half-and-half for lighter sauce)

  • ½ cup grated mozzarella cheese

  • ¼ cup grated Parmesan cheese

  • Salt and pepper, to taste

  • Extra Cajun seasoning, to taste

  • Fresh parsley (for garnish)


Instructions

  1. Cook the pasta:
    Boil pasta in salted water according to package directions. Drain and set aside.

  2. Cook the chicken:

    • Season both sides of the chicken breasts generously with Cajun seasoning.

    • In a skillet over medium-high heat, heat olive oil or butter.

    • Cook chicken for 4–5 minutes per side, until golden brown and cooked through.

    • Remove from pan, let rest a few minutes, then slice thinly.

  3. Make the sauce:

    • In the same skillet, add a bit more butter and olive oil if needed.

    • Sauté garlic and sliced bell peppers for 2–3 minutes until slightly tender.

    • Pour in the heavy cream and bring to a gentle simmer.

    • Stir in mozzarella and Parmesan until melted and creamy.

    • Season with salt, pepper, and extra Cajun seasoning to taste.

  4. Combine:

    • Add the cooked pasta and sliced chicken to the skillet.

    • Toss everything together until well coated in sauce.

  5. Serve:

    • Garnish with fresh parsley and an extra sprinkle of Parmesan or Cajun spice.

    • Serve immediately while hot and creamy.


Optional Add-ins

  • Veggies: Mushrooms, spinach, or sun-dried tomatoes

  • Protein boost: Add shrimp or sausage with the chicken

  • Extra heat: A dash of cayenne or a few drops of hot sauce


Homemade Cajun Seasoning (quick blend)

Mix together:

  • 1 tsp paprika

  • ½ tsp cayenne (adjust for spice)

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp dried oregano

  • ½ tsp dried thyme

  • ½ tsp black pepper

  • ½ tsp salt
